Easy Week-Night Crumble

I’m a mom who works full-time so spare minutes are precious on week nights. I’m also a lover of good, homemade food and that’s especially true when it comes to dessert. I was lucky to have put ten bags of fresh, organic berries in the freezer during the summer months so I make this super easy dessert when I need a fruit fix during Michigan fall and winters when fresh, locally grown fruit is hard to come by. This literally takes me five minutes to prepare and everyone in the family gobbles it up.
You can use fresh or frozen fruit for this recipe and I recommend using whatever you like best (berries, peaches, apples, etc.).
Serves 6-8
1/2 Cup Butter Softened
3/4 Cup Brown Sugar
3/4 Cup Quick Oats
1/2 Cup Flour
1/2 tsp Cinnamon
1/2 tsp Salt
1. Fill a 9×9 pan three-fourths of the way with the fruit of your choice. I’m all about ease so I don’t even bother thawing my fruit beforehand.
2. Mix dry topping ingredients first. Cut softened butter into dry ingredients and mix with a large fork until your topping is crumbly, almost resembled granola (this takes a minute or two so be patient).
3. Spread your topping over your fruit.
5. Pop it in the oven at 350 degrees for 30-40 minutes. I know mine is done when I can see the fruit bubbling through my glass pan and the topping has turned a golden brown.
6. Let sit 5 minutes before serving. I suggest a scoop of ice cream on top, too.
